In the kitchen on Sunday...
On Sunday I was busy making some Beef and Potato Pies, I used some home grown beef, potatoes and onions but used ready made short crust pastry for the top. I also had a bit of a baking session too and made some Cherry and Coconut Muffins. We are going to give them to the kind gents who helped us to rescue Ruby the cow from the ditch on Friday afternoon, who Iis doing very well back at the croft in the cattle shed.

In a right Pickle!!
Well, what a busy day!! Yesterday we harvested the last of the carrots and red cabbage from the vegetable plot on my boyfriends croft. I made carrot cake and blanched the carrots, so today we decided to pickle some of the cabbages. We used pickling spices and malt vinegar and put the cabbage in 'Kilner' jars, we now need to give it time to marinate properly before it is ready to eat.
Half way through the pickling process we had a visit from a friend in the village, who had come to tell us that one of the cows had got stuck in a ditch... down tools and off we went!!!

Ruby was well and truly stuck!!
So we called for more help, not a man with a van, but a man with a digger!
Thankfully, with all of the help we managed to get Ruby out of the ditch, back to the croft and into the cattle shed....Phew!

So, since we have plenty of carrots we've blanched some to put in the freezer and I've also made a carrot cake with orange buttercream.... yum!

A Traditional Scottish Dessert!
Thought I would try a traditional Scottish dessert this evening... CRANACHAN!

Veggie Soup!
We had a big storm last night here on the Isle of Lewis, it was recorded at Stornoway airport that the winds reached a speed of 113 mph, that's hurricane force 12! So, for lunch today I made vegetable soup to fill us up and keep us warm.

No-Fat Cake!
Like a lot of people we have over eaten and drank a lot over the festive period and ended up with a few extra pounds. Since Monday my boyfriend and I have been trying to eat healthily to shed the extra pounds so we've been following my Slimming World eating plan which I have lost 7st with over the last couple of years. It was my boyfriends dads birthday today and you've got to have cake on your birthday!, so I made an '8 syn Cake'. I've added the recipe to the 'Favourite Recipes' section.

Surprise Brekkie!
My boyfriend made me breakfast yesterday, a bacon sandwich! However, he had also put marmalade on it too, wasn't so sure at first but once I'd tasted it I loved it! You have to try it, sweet and sour.... yum!
