8 Syn Cake
Ingredients:
Cake:
6 eggs
1tsp Vanilla Essence
50g Self Raising Flour
8tblsp Sweetener

Filling:
250g Total 0% Greek Yoghurt
1tsp Vanilla Essence
4tblsp Sweetener
Strawberries
Raspberries

Method:
1.
Fry light the cake tins or line them
ready.
2.
Pre-heat oven on Gas Mark 4, 180˚C,

Separate the eggs and place the yolks, vanilla essence,
2tblsp Sweetener into a bowl.
4.
Put the egg whites into another bowl
and whisk, add 6 tblsp of sweetener , whisk until peaks form.
5.
Now whisk the egg yolk mixture until pale and fluffy.
6.
Add the egg yolk mixture to the egg whites and fold in gently, now add
the sieved flour and fold again. Do not overwork or you will remove a lot of
the air.
7.
Split the mixture between the two baking tins and place in the oven for
15-20 mins or until golden brown.
8.
Leave to cool, don't try to remove from the tins until they have cooled
slightly as they may break.
9.
For the filling, whisk the
yoghurt, sweetener and vanilla essence in a bowl.
10.
Chop the strawberries into small pieces.
11.
Spread the yoghurt mixture onto one of the cakes and top with
strawberries.
12.
Place the other cake on top of the strawberries. Spread the remaining
yoghurt on the top of the cake and arrange the raspberries.
13.
Serve and ENJOY!!
